Scottish food: Haggis

Haggis is a Scottish High Court of Justice, which is similar in some respects a rather coarse sausage. It is the national dish of Scotland, Robert Burns, the great Scottish poet, the famous “Address To a Haggis,” said Haggis called the “chieftain o ‘the Puddin-race.” It is a staple of Scottish cuisine, and is served in the traditional manner, and in the “Haggis Supper” (deep-fried haggis with a side of French fries) or even a haggis burger. It is sold prepared in supermarkets all year round. But what exactly is this mysterious and often misunderstood food?
