HARVEST FAIR CHILI
£ 5. red beans
1 / 2 bushels of tomatoes, chopped
10 hot peppers, chopped
6 lg. Eggplant, peeled and cut into 1 inch cubes
5 Sweet peppers, chopped
10 onions, finely chopped
2 lg. Cans tomato paste
1 / 4 c. Chili powder
1 / 2 c. Oil
Select Clean on beans from small stones. Rinse well and cover with water. Bring to boil off
Heat and let 2 to 3 hours. Rinse and cover with fresh water. Bring to a boil, simmer for 1 1 / 2
Hours, until beans are tender.
Saute onions and eggplant until transparent, add peppers hot and sweet and fry 5 minutes.
Add the tomatoes and puree. Cook for 20 minutes and then add cooked beans and chili powder.
Serve with corn chips, grated cheese and fresh salsa.
