Kentucky State Fair favorite cake
1 1 / 2 c. plus 2 tbsp. Sugar
2 c. Flour
2 1 / 2 tsp. Cinnamon
1 (4 ounces) shredded coconut
1 (8 ounce) can crushed pineapple
1 tsp. Baking powder
1 1 / 4 c. Oil
1 / 2 tsp. Salt
4 eggs
Combine all ingredients enter into a large bowl. Blend with electric mixer on low speed until ingredients
be combined. Turn mixer at medium speed beat until smooth. Pour into greased and floured pan.
Bake about 45 minutes in the preheated oven 350 degrees. Use a cake pan, the lid for storage.
Glaze:
2 / 3 stick butter
1 pounds powdered sugar
1 c. chopped pecans (or other nuts)
1 (8 ounces) cream cheese
2 tsp. Vanilla
Whip butter and cream cheese together. Add other ingredients and beat well.
